Capi's Perfect Picnic
Old Mill bread
Assorted cheeses
Local strawberries
Local honey
Local pickled okra
Watermelon wedges
Pasta salad with. cherry tomatoes, fresh herbs & feta
Marinated zucchini & yellow squash salad with Vidalia onions
Rotisserie chicken (Boulevard)
Note: All of the items were purchased at the Farmers’ Market and chicken added from INSIDE the River Market to finish it out.
serves 6
4 c. peeled. seeded and diced cucumber
3 c. cherry tomatoes, cut in half
4 green onions, chopped
1 c. pitted Greek olives
1 c. feta cheese, crumbled
1/2 c. chopped fresh mint leaves
1/2 c. chopped fresh flat-leaf Italian parsley
1/4 c. lemon juice
1/2 c. extra virgin olive oil
salt and pepper to taste
Combine
all ingredients in a mixing bowl and toss gently to combine. Pack in
mason jars for easy for easy transport for a picnic.
Summer Squash Salad
serves 6
1 lb. zucchini
1 lb. yellow squash
3 T. extra virgin olive oil
2 T. lemon juice
2 cloves minced garlic
1/4 c. flat-leaf Italian parsley
kosher salt to taste
1 c. shaved Parmesan cheese
3/4 c. toasted almonds coarse chop
2 c. arugula
Thinly slice the squash lengthwise with a vegetable peeler or a mandolin.
Whisk together olive oil, lemon juice, garlic and kosher salt to taste. Pour dressing over squash. Let sit for 15 minutes.
Add shaved Parmesan and toasted almonds. Sprinkle with black pepper to taste.
If you want to add the arugula, do so just before serving.
Now you are set to enjoy a picnic and a movie!
